Instructions

    Pat salmon dry and season with salt, pepper, and Italian seasoning.

    Heat olive oil in a large skillet over medium-high heat. Cook salmon 4–5 minutes per side until golden and cooked through. Remove and set aside.

    In the same skillet, sauté garlic for 30 seconds. Add sun-dried tomatoes and cherry tomatoes. Cook 2–3 minutes.

    Pour in chicken broth and cream. Stir in white beans and parmesan. Simmer 5 minutes until slightly thickened.

    Add spinach and cook until wilted. Return salmon to skillet and spoon sauce over top. Simmer 2–3 minutes.

    Serve over cauliflower rice, quinoa, or alongside roasted vegetables.
