Ground Beef Burrito Bowls

Instructions

    Cook the rice according to package directions. For white rice, bring 4 cups of water to a boil, add rice and a pinch of salt, reduce heat to low, cover, and simmer for 15-18 minutes until tender and water is absorbed. Fluff with a fork and set aside.

    While the rice cooks, heat a large skillet over medium-high heat. Add the ground beef and cook for 6-8 minutes, breaking it apart with a wooden spoon, until browned and no longer pink. Drain excess fat if needed.

    Add the taco seasoning and 1/4 cup water to the cooked beef. Stir well and simmer for 2-3 minutes until the liquid reduces and the beef is well coated. Season with salt and pepper to taste.

    In a microwave-safe bowl, heat the black beans and corn together for 1-2 minutes until warmed through, or warm them in a small saucepan over medium heat for 3-4 minutes. Season lightly with salt.

    To assemble the burrito bowls, divide the cooked rice among 4 serving bowls. Top each with seasoned ground beef, black beans, corn, and shredded cheese. Add your choice of optional toppings like salsa, sour cream, guacamole, lettuce, tomatoes, jalapeƱos, and fresh cilantro.

    Serve immediately while warm, or if meal prepping, allow components to cool completely before dividing into airtight containers. Store in the refrigerator for up to 4 days. Reheat in the microwave for 2-3 minutes, adding toppings after heating.
